To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Premix (yields 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Put all the items inside a pot, bring to a light boil, agitating to dissolve. Next, remove from the heat allowing it to cool completely. Transfer into an sealable bottle, seal and store chilled, it can be stored for around a month.
Preparing the Cocktail Base: Mix every spirits and syrup into a large bottle, allow it to infuse for an hour, then strain preferably using muslin, to ensure it's fully clarified.
When ready to serve: Measure 85ml from the cocktail base to a mixing glass filled with ice, gently stirring carefully for a minute until cold. Strain to a frosted cocktail glass or equivalent, top with a few cranberries adding the final touch using a light spray of the essential oil over the top.
